Plant from early spring to ~3 months before expected fall frost. For bunching, sow 3–4 seeds every 12–18", ½" deep, in rows at least 18" apart. Thin to 1 plant per group. For baby leaf, sow tighter (60 seeds/ft) in a 2–4" wide band. If starting indoors, seedlings should be ready to transplant in 4 weeks. Kale prefers cooler growing temperatures, 55–75°F (13–24°C) as a minimum, optimal of 60–70°F (16–21°C), but will still produce in warm summer conditions. Consistent moisture will produce the best quality leaves. For fall crops start seedlings in May transplanting out in June–July. To ensure maturity, seed early in areas where heavy freezes occur early in fall. Can be grown successfully where winters are mild (temperatures rarely below 32°F/0°C), transplanting out from September to February in such climates.<span data-sheets-formula="='2023-2024 SUBS'!R[-711]C[-1]" data-sheets-userformat='{"2":12527,"3":{"1":7},"4":{"1":2,"2":16370588},"5":{"1":[{"1":2,"2":0,"5":{"1":2,"2":0}},{"1":0,"2":0,"3":1},{"1":1,"2":0,"4":1}]},"6":{"1":[{"1":2,"2":0,"5":{"1":2,"2":0}},{"1":0,"2":0,"3":1},{"1":1,"2":0,"4":1}]},"8":{"1":[{"1":2,"2":0,"5":{"1":2,"2":0}},{"1":0,"2":0,"3":1},{"1":1,"2":0,"4":1}]},"9":1,"10":1,"15":"Arial","16":9}' data-sheets-value='{"1":2,"2":"Metchosin Farm’s original mix, selected from seedlings in our gardens since 2009. Bred in Portage la Prairie, Manitoba, as a selection from a Thatcher cross, it’s a sturdy, beardless variety with stiff, mid-long heads. Pembina matures relatively early, yields well, and offers fair resistance to rust. It’s especially valued for its excellent baking quality and is still grown on a small scale today, particularly in areas where rust can be a concern.

Certified Organic

Growing instructions

For spring wheat: Direct sow in mid to late spring once soil temperatures reach 4-10 degrees or when soil can be "worked". I’ve been delighted to see some variegated white, lavender, and hot pink plants, which I've been encouraging. Some roots are branching.

Interestingly, my plants took over a year to produce the pink pigment. I sowed them in spring 2024, and then I dug them up in April 2025, no roots were pink. It produces masses of long off-white roots that taste somewhat like a potato crossed with a carrot and a parsnip. They are great roasted, but can also be boiled, fried, stewed, added to soups, or eaten raw grated or out of hand. The roots do not need to be peeled, although some roots have a thin woody core that is easily removed by the diner after cooking. The spring shoots can be eaten, as well as the mature leaves, which taste like celery leaf or parsley.

If started early enough from seed, they can make large enough roots to eat by fall. But for the best harvest wait until the second year at least. Sow seeds outdoors in small pots in early spring when the nights are still cool (below freezing is fine) and you should have excellent germination. If it's already warmed up, sow your seeds in a small pot and alternate putting the pot outside in the sun or at room temperature, and in the fridge for a day or two at a time. Or try sowing in the fall, or even wait until the following spring to sow. Cut off the largest roots, and replant the rest of the crown. If any offsets have formed around the base, you can pull or cut those off and plant them separately. The main crown can often be divided into multiple new plants using a sharp knife. Roots can be harvested all winter, and probably all year, although the flavour is probably best from fall-early spring.

Clean roots with a strong stream of water.
