When to Plant: 4 to 6 weeks before soil freezes. In warmer regions, planting ranges from late September/early October until the last week of November.

Description: Originally from Colville native reserve in Inchelium, Washington. It is widely adapted to the West coast climate. Artichokes are typically large, store well and have a wide range of flavors. They are called artichokes because of the arrangement of the cloves in a bulb similar to an unopen artichoke flower.
Use: This garlic is the perfect choice for making salad dressings and dips due to it having a more mild pungency. Learn more recipe ideas on our website.
Flavour: Mild when raw, cooked and especially when fresh (uncured).
Grow: Artichoke varieties make for beautiful braids and they store very well. A softneck, they do not produce scapes, however some stalks will still attempt to produce one and you will find an extra little treat (bulbils) in the stalk of the plant.
