Overwintering cauliflower is transplanted out in August for harvest the following spring. Since it develops in the cool weather of spring it tastes smooth, sweet, and nutty with superior flavour compared to the usual summer grown cauliflower. Plus it is nice to have a substantial vegetable so early in the spring.
We grow this seed as part of a local Salt Spring Island project to save this variety of overwinter cauliflower from disappearing. This seed came from plants that made it through a rough PNW winter including snow, wind, rain, and a cold snap to -10C!

Growing instructions
Start indoors in late May, sow 3-4 seeds in each pot, 5mm deep under a bright light. Seeds will germinate in 7-10 days. Thin down to the single strongest plant. Transplant in July for spring harvest. 45-60cm apart in row and 75-90cm apart. Full sun annual, ideal soil pH of 6.5-7.0. Maintain even soil moisture. Harvest when the florets are just beginning to separate, at this point it is at full size and the flavour is at its peak.
