Huron is a classic heirloom wheat from 1925, valued for bread baking thanks to its high gluten content. It’s a bearded wheat variety developed from a cross made in Ottawa in 1888. This hardy, mid-season variety is drought tolerant and has produced strong yields across a wide range of conditions. Still grown in Quebec and Atlantic Canada, Huron also impressed us in a wetter-than-average season, outperforming more dry-land types in both yield and grain quality. Bonus: the straw is great for crafts and weaving.

Growing instructions
For spring wheat: Direct sow in mid to late spring once soil temperatures reach 4-10 degrees or when soil can be "worked". Planting early is recommended to maximize yield.
For winter wheat: Direct sow in late August to late-September. Germinated seeds develop a crown 3-4 leaves before going dormant over winter. The exact planting window depends on your specific region to balance root growth with the risk of freezing damage before winter.
Wheat can be sown 2cm deep in full sun to partial shade.
