Finding an open-pollinated bok choy that is slow to bolt can be a challenge, but we were very impressed with this variety, originally sourced from quality seed producers at High Mowing Seeds. This lovely little, vase-shaped bok choy is fast-growing, mild, and tender. Medium-green leaves sit atop pale jade-green, spoon-shaped stalks that turn sweet and succulent when cooked. Bred to handle heat, cold, rain, and damp conditions, it’s a dependable choice for early spring and late summer plantings, especially in mild-winter areas. Harvest at around 6" tall, or enjoy it younger or bigger - crisp and refreshing raw, and soft, emerald-green and subtly sweet once cooked. Great for salad mixes, stir-fries and kim-chi.
